以前，到聖殿去獻祭是逾越節的主要活動，現在，由於聖殿被毀了，無法再獻祭，逾越節的重心全都放在 逾越節晚餐 （Seder）上了。
大部分的猶太節日都有一個重要的晚餐，然而猶太人從來就不是為了大快朵頤而吃這頓飯，節日的晚餐中都會有相關的儀式，並且對下一代傳遞文化，逾越節的晚餐也不例外。
逾越節第一天的晚上，猶太人會在家中舉行Seder，通常邀請所有家人和朋友一起，是個盛大的晚宴。Seder的意思是順序、排列，代表了逾越節晚餐中有許多儀式，要照著流程一步步進行。
逾越節晚餐 桌上的擺設
・ 逾越節晚餐盤 Seder plate
逾越節晚餐沒有大魚大肉沒關係，沒有華麗的擺飾也沒關係，一定要有的是放在餐桌中央的逾越節晚餐盤，這可以說是整個晚餐的核心。
不論是精緻且昂貴的專用盤、平常吃飯的餐盤、免洗的紙盤，只要是一個圓盤子都可以用來當逾越節的晚餐盤，重要的是，上面必須放有指定的六樣食物。

就像我在每個猶太節日都會說的，猶太人長年散佈在世界各地，他們漸漸發展出一些不同的傳統，所以做法會有差異，並沒有對錯。
逾越節晚餐盤上的六樣食物並沒有嚴格規定，主要是符合意義就可以了。
① Chazeret 苦菜
沒有特定的菜種，只要是吃起來會苦的菜就可以，通常用蘿蔓生菜、羽衣甘藍、芝麻葉等等。
用來代表以色列人在埃及奴役的艱苦日子。
② Beitzah 白煮蛋
必須要是一顆完整、煮熟的蛋，通常是用水煮蛋，也有人堅持應該用火烤的。
蛋代表著一個新的生命，就像以色列人即將離開埃及，開始一段新的生活、一個新的時代。也象徵春天的開始，也就是逾越節所在的季節。
③ Zeroa 羊的脛骨
這是晚餐盤上唯一的肉類，傳統上要用羊的脛骨，但並不是那麼容易買到，很多人會用雞腿骨來代替。
以前，猶太人要上聖殿去獻祭，用的是一整隻的羊。現在沒有聖殿了，只能用一隻脛骨來代表獻祭的羊羔。因為獻祭時羊要被火燒，所以，晚餐盤上的這根骨頭，必須要是烤過的，還要有一點焦。
④ Maror 苦菜（辣根）
和Chazeret一樣是苦菜，通常放的是辣根（horseredish），有些人直接放一整塊，也有人會把它磨成碎絲。
辣根吃起來很辣、很嗆，也是用這樣的味道來代表以色列人當奴隸時的坎坷與艱辛。
⑤ Karpas 綠葉蔬菜（巴西里）
通常放巴西里（parsley）或是芹菜的葉子，我也聽過有些人用煮熟的馬鈴薯或洋蔥，不管是什麼，都要沾一下鹽水。
鹽水用來象徵以色列人在埃及時所流的眼淚，綠色的蔬菜則是有代表春天的意思。
⑥ Charoset 蘋果泥醬
這是晚餐盤上唯一帶有甜味的食物，切碎的蘋果、堅果，也可以放一些果乾，加上肉桂和紅葡萄酒，混合成像是泥或著醬的質地。
蘋果泥醬偏深紅、咖啡色，看起來就像磚塊和泥土，也就是代表著以色列人當奴隸時被迫做的苦工。
整體來說，所有晚餐盤裡放的食物都是為了讓人想起以色列人在埃及奴役的日子，包括當時的辛苦和後來上帝的拯救，這也是過逾越節的意義。
・ 哈加達 Haggadah
逾越節晚餐上，每個人都有一本哈加達，根據裡面的指示來進行流程與儀式。
哈加達（Haggadah）是一本過逾越節必備的小書，裡面寫著以色列人出埃及的歷史典故和一些流傳的故事，也包含了逾越節種種的規定。
哈加達有很多版本，有簡單文字版的，有豐富附插圖的，讓人讀起來更有趣，更有專門為小孩設計的繪本版。另外，除了希伯來文，也因應世界各地的猶太人而翻譯成英文、法文等其他語言。

逾越節晚餐 的流程與儀式
逾越節晚餐開始時，有幾件事要做：
喝下第一杯酒，用水洗手，拿綠葉蔬菜蘸在鹽水中。然後，要將一塊無酵餅從中掰開，並把其中一半藏在家裡某個地方。
接著就到重頭戲了。
－ 講述逾越節的故事
很多猶太節日都有「講述歷史故事」這項必做的儀式，通常，不論是在會堂裡或是自己家中，都是由一位帶領者朗讀經文給大家聽，然而，逾越節卻大不相同，講述歷史故事是一段非常活潑且具互動性的時間。
餐桌上，所有的人都要參與，一人一句，輪流念哈加達，中間加入一些討論，不僅討論以色列人出埃及發生的事，也思想這段歷史與現今生活的關聯性，小孩則是需要提出相關的問題。
不同地區的猶太人有不同的傳統，每個家庭也有自己習慣的方式。有些人會在當中穿插一些歌曲，也有人會準備各種道具，一邊講故事、一邊演戲。
不管用什麼方法，都是為了要讓講述故事變得更生動有趣，也讓內容變得更豐富。因為這個儀式的目的在於教導小孩子，讓他們不要忘記自己的文化與歷史。

－ 吃無酵餅和苦菜
經過一連串的儀式，在喝下第二杯酒後，終於要開始吃東西了。
最先要吃的是逾越節的重要角色——無酵餅，接著吃一點苦菜，然後再拿無酵餅夾著苦菜一起吃。不論是蘿蔓生菜或是辣根，吃到嘴裡都會散發出苦味，讓人想起並感受以色列人在埃及當奴隸時的辛苦。
－ 享用晚餐
吃過無酵餅和苦菜後，才算真正的開動，可以享用晚餐了。
除了晚餐盤和無酵餅之外，逾越節的晚餐桌上還有許多美味的菜餚，非常豐盛。比較傳統的是無酵餅丸子湯、燉煮的牛肉，也許會有魚丸凍（gefilte fish）、烤雞、羊排等等。
逾越節晚餐並沒有特定的菜色，都是依照每個家庭的習慣，只要符合“無酵”的原則就可以了。
－ 吃藏起來的無酵餅
用完餐的第一個節目，是要吃晚餐開始時藏起來的那一半無酵餅。
所有的小孩會一起在家中四處找無酵餅，找到的人就可以得到獎勵，是個有趣的小遊戲，和復活節尋找彩蛋的活動有點像。
找到藏起來的無酵餅後，餐桌上的每個人都會分一小片，當成飯後甜點來吃。
－ 祝福與酒
經過這麼多的流程，連甜點也吃完了，逾越節晚餐卻還沒結束，還有幾個儀式要進行：喝第三杯酒、禱告、朗誦讚美詩、唱歌。
整個晚餐的最後，以喝下第四杯酒來收尾。很多猶太人還會講一句話：「明年在耶路撒冷過逾越節（next year in Jerusalem）！」
自從猶太人被打散至世界各地，他們開始用「明年在耶路撒冷過節」這句話做為祝福，其實也是自己的期待，現在則變成了一個習俗。當然，住在以色列的猶太人就不會這樣說了。
逾越節晚餐雖然有很多規定的儀式，但是形式很自由，有一定的莊嚴，卻不死板，而且從老到小每個人都能參與。即便食物不是最棒的，但我仍然認為逾越節晚餐是所有猶太節日中最有意思的。
只不過……如果你喝不了四杯酒，那可能就無法吃逾越節的晚餐了…… ☀
